Neyychorru - Malabar Ghee Rice

Ghee Rice Ingredients4 cups Basmati rice6 cups water1 tsp salt1 Cinnamon stick3 cardomom pods1 star anise3 cloves.2 tbsp ghee / oil For decoration1 tbsp oil/ ghee1 small onion finely sliced1 tsp sugarRaisins &  cashew nutsA pinch of saffron / yellow colour1 hand full of coriander choppedMethodBoil water, add salt & keep aside. French Beans - Lentil Fry

French Beans - Lentil Fry Ingredients1/2 cup lentil seeds250 g french beans1 tsp mustard seeds1/2 tsp cumin seeds2 chopped shallots1 tbsp dessicated coconut / grated coconut1/2 tsp turmeric powder1 tbsp oil1/2 tsp salt1/4 tsp chilli powdercurry leaves1/2 tsp cumin powderMethodCook lentils & keep aside. Indian Fruits Salad

Indian Fruits SaladCut all the fruits.(canteloupe, banana, apples, cherries, apricots)Press one orange & add to the fruits Mix all the fruits in a salad bowl. Cover & chill. To make custurdDilute 30g of custurd powder in cup of milk(without any lumps).Boil 1/2 l milk. Add 50g sugar. Then add the prepared custurd powder. Stir continously. Cool & refrigerate it. Pour the chilled custurd on the the fruits, toss & serve.Decorate with cherries.

Crêpes mille trous

Pancake with thousand holes Ingredients250 g Semolina 250ml milk1 egg30 g Fresh Yeast 1 glass of water 1/2 tsp saltMethod Heat  milk & water  until just warm . Don't boil . Dilute yeast in it.Add egg, semolina & salt . Mix well & keep aside for 4 hours.In a nonstick pan make the pancakes. Wait until the whole pancake is covered with holes.Cook the other side.Serve with honey / maple syrup / sweetened coconut milk .

 Neyy Pathiri  Ingredients2 cups roasted rice powder  3 cups of water1 tsp fennel seeds1 tsp salt2 tbsp dessicated coconut / 2 tbsp grated coconut2 shallotscurry leavesOil for fryingMethod Blend coconut, shallots, curry leaves & fennel seeds in a mini food processor. Madeira Cake

Madeira CakeIngredients 175 g butter175 g sugar250 g flour ( I took 125 g flour + 125 g cornflour)3 eggs3 tbsp milk3 tsp baking powdera pinch of salt zest of one lemon / 1 tsp vanilla essenceMethodPreheat the oven to 180°C.Cream together the butter, sugar & salt on medium speed with a paddle attachment.Add beaten eggs.Sieve the flour and baking powder together and fold into the cake mixture.Add essence/ zest of lemon .Pour the batter into the greased cake pan and place in the oven. Millau This is  a charming town  in the valley of these rockies . On the way we can see the  highest bridge in the world - " Le Grand Viaduc de Millau ". The Millau Viaduct is designed by an English architect Lord Norman Foster. It's height is 343m & lenght is 2460 m. It's the tallest road bridge in the world. It's a masterpiece of French civil engineers & an English architect.

Kayappam - Kerala special

KayappamIngredients2 mashed bananas2 cups flour1 cup sugar1/2 tsp baking powder1 egg1 tbsp chopped copra (dried coconut)1/2 tsp cardomom powderoil for frying MethodMix all the five ingredients & set aside for a 15 min.I'm adding an egg so that the appam doesn't absorb oil.Add cardomom powder & mix well. Heat oil  & pour 1 tbsp of the batter. When golden brown, cook the other side.Repeat the process with the remaining dough.Serve hot with tea.

Bombay Toast

Bombay Toast Ingredients2 eggs1 glass of milk6 tsp sugar 1 tsp vanilla essence / cardomom powder / nutmeg powder 6 slices of bread1 tbsp butterMethodCut the bread slices in rectangle/ triangle shape.Beat eggs.Add milk, sugar & vanilla essence.Dip the bread slices as in figure.Grease the non stick pan with butter.Fry the slices on both sides.Sprinkle sugar & serve.
