Chulcha Paratha

 Soft Chulcha Paratha

Chulcha
Ingredients
400g flour
100g semolina
1 tsp salt
100 ml milk
200 ml luke warm water
1 onion  (chopped)
1 green chilli (chopped)
chopped curry leaves
20g fresh yeast or (2 tsp dried yeast )
1 tsp sugar
Method
Dilute yeast in warm water with 1 tsp sugar .
Set aside for 15 minuites.
Mix all the ingredients with the wooden spoon.   
Cover the bowl with a cloth & leave for 1or 2 hours,  until it's doubled.
If the batter is thick add some more water.
Preheat a non stick pan . Spread oil on it .
Pour one spoon full of batter.
Chulcha's are thick rottis so don't spread.
Cover with a lid & cook it.

Smear  some oil & cook the otherside.
Ur Chulcha is ready ! .

Hi Hélène<br /> I have just posted Murtabak recipe. <br /> First make the filling as in the above recipe.<br /> For Kottu Rotti add chopped chappattis/Tortillas.<br /> For "Kottu Porotta" add chopped Porottas.

Have tried a dish in an Indian/sri Lankan restaurant in Paris calle Kottou Barotha, which is a paratha chopped up finely and mixed with spices and vegetables (meat also if required). It is absolutely delicious but I cannot find the recipe anywhere in my cookbooks or on internet. Would someone have a clue how to make it ??<br /> <br /> Thanks a lot,<br /> Hélène
