Poori - Galettes de blé frites

Poori ( Puffed Indian bread )   Ingredients500 g flour250 ml water1 tsp saltoil for fryingMethodMix first three ingredients & knead well.Cover the bowl with a damp cloth & keep aside for 1 hour.Take a lemon sized ball & flatten it using a roller( 8/10 cm discs).Repeat the process with other dough balls. Heat plenty of oil.Gently slip the disc in hot oil.When poori pops fully, splash hot oil on the top.Turn over & fry the other side.Remove using a slotted spoon & drain on a kitchen paper. Kefta à la marocaine

Rose milk

Rose milk / Falooda Ingredients500 ml milk125 g rose almond paste 1 tsp rose essenceAn apple (scraped)MethodBoil milk & add almond paste.Stir continuosly.Add rose essence & apple. If needed add some sugar. Chill & serve.This is an excellent nourishing drink for kids.

Fried Okra's

Okra FryIngredients250g Okra2 onions(chopped)1/2 tsp chilli powder1/4 tsp turmeric powderCurry leavessalt to taste2 tbsp veg oilMethodWash & completely dry the okra's.Cut them into rings.(Even the knife must be dried.)Heat a nonstick pan with 2 tbsp oil.Fry onions until light golden brown.Add okra  & fry occassionely.Add salt, turmeric powder & chilli powder.Stir & add 2 tbsp water.Cover & cook on low fire for 10 min.Garnish with curry leaves & serve with rice.

Ulli Vada

Ulli Vada Ingredients4 finely sliced onions1 tsp chilli powder1 egg1 tsp ginger paste / chopped ginger1 tsp salt3 tbsp gram flourcurry leaves / coriander leaves ( chopped)Oil for fryingMethodMix first five ingredients & keep aside for some time.Add the gram flour & mix.If the batter is thick add some water.Keep aside for 15 min.
