Bitter Gourd Curry
Ingredients
1 bitter gourd
2 onions(chopped)
1 green chilli
2 tomatoes(chopped)
lemon size tamarind
1/2 tsp musturd seeds
1/4 tsp fenugreek seeds
1/4 tsp cumin seeds
1/4 tsp turmeric powder
1/2 tsp red chilli powder
2 tbsp oil
Salt to taste
Curry leaves.
Method
Wash & cut the bitter gourd in semicircles.
Soak tamarind in water & keep aside for 10 min. Extract the juice.
Heat oil in a sauce pan.
Splutter musturd seeds.
Add cumin seeds,fenugreek seeds & curry leaves.
Add onions & fry until light golden brown.
Add bitter gourd & fry occassionely.
Add salt, turmeric powder & chilli powder.
Then add tamarind extract & chopped tomatoes.
Cover & cook on low fire for 15 min.
Garnish with curry leaves & serve with rice.
