Pola / Pesaha Appam

Ingredients
2 cups rice flour
10 g fresh yeast
1 tsp sugar
1 cup semolina
1 cup coconut milk
1/2 tsp salt
Method
Dilute yeast in luke warm water with 1 tsp sugar .
Set aside for 15 minuites.
Blend semolina with one cup of water & cook in medium heat for 5min.
Add this to the rice flour.
Then add diluted yeast & coconut milk.
Mix well & keep aside for 6 hours in a warm place
If the batter is thick add some more coconut milk.
Grease the Idli maker with oil & pour 1 tbsp of batter.
Steam for 15 minuites.
Serve this spongy bread with stew.
Pola / Pesaha Vattayappam is the Passover Bread of Kerala Christians.
They usually pour the batter in a greased pan/kinnam & steam.
