Spicy Carrot Idli

Spicy Carrot Idli

Ingredients
2 medium sized carrots
A piece of ginger
2 green chillies
2 cloves of garlic
1 tsp fennel seeds
500 g semolina
4 yogurts (125 g each)
1 tsp salt
20 g fresh yeast
1 tsp sugar
1 bowl luke warm water (300ml)
Method

Blend first five ingredients in a mixer & keep aside.
Dilute yeast in luke warm water with 1 tsp sugar .
Set aside for 15 minuites.
Mix all  the ingredients & keep aside of 2/3 hours, until it's doubled.
Add some water if the batter is thick.
Then add the blended mixture & mix well.
Grease the Idli maker with oil &  pour 1 tbsp of batter.
Steam for 15 minuites.
Your Spicy Idli is ready to serve .

Ingredients

500 g flour
250 ml luke warm water
2 tbsp Scraped fresh coconut/ dessicated coconut
3 shallots(chopped)
2 green chillies (chopped)
Chopped curry leaves
1 tsp salt
Oil (Coconut oil)
Method

Mix all the ingredients & keep aside for 2/3 hours.
Make evenly sized balls.
Take a lemon sized ball & flatten it using a roller.

Heat non stick pan . Spread oil on it .
Add the roll out chappathi.
Pour some oil & press the edges.
Then cook the other side.
Repeat the process with other balls.
Serve hot with veg / non veg curry.
In Srilanka it's served with sambol.

Ingredients

500 g salmon or any other fish
1/2 tsp musturd
1/4 tsp fenugreek seeds
2 cloves of garlic
a small piece of ginger
1 tsp chilli powder
1/2 tsp turmeric powder
1 tsp coriander powder
3 Shallots (chopped)
Tamarind (lemon size)-In kottayam they use Kudam puli.
Curry leaves
Salt to taste

Method

In a bowl of water soak tamarind & keep aside.
Marinate fish with chili -tumeric & salt & keep aside.
Heat oil & splutter musturd seeds & fenugreek seeds.
Then fry chopped onions & curry leaves.
Add garlic-ginger paste & fry again.
Add tamarind water. (discard the pulp).
Close with a lid & cook for 5 min.
Add fish pieces. Simmer & cook for another 5mn.
Garnish with curry leaves & s
erve with rice.

Le Pain Maghrebin.

Ingredients

500 gms  Semolina
20gms fresh yeast
1 tsp cumin seeds
An egg
Salt to taste

Method

Dilute 20gms fresh yeast in a bowl in luke warm water.
Take semolina in a bowl.
Add an egg & a spoonfull of cumin.
Mix well with diluted yeast & pour into a greased  cake pan. 
Cover the pan with a cloth & keep aside for 30 minuites.
Then bake it  for 20 mn -Temp 200°C.
Serve with curry.

Puttu - Steamed Rice Cake.

On the "Mother's day" I'm posting my Mom's Puttu.

Puttu is the traditional breakfast of Kerala .
It's a steamed rice cake with coconut gratings.
In ancient times, Puttu is prepared in coconut shell or bamboo.
Puttu  prepared in coconut shell is called "Chiratta Puttu" & the one prepared in bamboo is " Kana Puttu".
Puttu makers in steel /aluminium are available in Indian stores.

Ingredients
250 g roasted rice flour
250g grated coconut
1/2 ts salt
hot water

Method
Dilute salt in water.
Take rice powder in a bowl.
Pour water & mix with fingers so that it look like bread crumbs.
Add grated coconut & mix well.
Boil some water in the bottom vessel of the Puttu maker.
Put 1tbsp coconut in the botom of the puttu maker.
Then put a handfull of rice mixture.
Layer coconut & rice mixture alternatively.
Place the puttu mould on the vessel & boil for 5 mn.
Serve with black Channa dal curry/ fresh bananas/stew.

Eiffel Tower -  the symbol of Paris is one of the most famous landmarks in the world. It  was built for an Universal Exhibition in 1889 commemorating the centenary of the French Revolution.This 320 meters high tower is the masterpiece of Gustave Eiffel. It's construction began in 1887 and was inaugurated on March 31st 1889. Of the 700 proposals submitted in a design competition, Gustave Eiffel's tower was unanimously chosen. At  that time many French artists and intellectuals criticised his work. Now this metal structure is  the symbol of Paris, attracting over 6 million visitors each year. The Eiffel Tower twinklings were made to celebrate the Millenium New Year.  At night this twinkling metal lady is really impressive.Three different levels are accessible by foot or elevator. On sunny days we can get a spectacular view of Paris from the third floor. Anyone visiting Paris must see the day & night view of this elegant metal lady .
