1 cup dessicated coconut
1/2 tsp Cardamom powder
2 cups sugar
3 cups Flour
A pinch of salt
Cook carrots in two cups of water.
When cool, grind in a blender.
Heat ghee in a sauce pan.
Add the blended carrots, coconut & sugar .
Stir till the mixture becomes dry.
Garnish with cardomom powder & keep aside.
Make chapathi dough using flour, ghee, salt & some water.
Take a small ball and pat it into a small circle.
Place a spoonfull of carrot mixture in the centre & cover with dough.
Pat again into a round circle.
Fry both sides of the the poli till light golden brown.
Repeat the process with ther balls.
