Irish Boxty Pancakes


Ingredients
3 medium size potatoes
3 tbsp flour
1 egg beaten
1/2 glass milk
Salt to taste
Method
Peel, grate & squeeze potatoes.
Mix all the other ingredients & make a thick batter.
If the batter is very thick add some more milk.
Grease a nonstick pan with butter.
Drop a spoonfull of batter.(Don't spread)
Cook either sides until light golden brown.
Serve with sugar & melted butter / blackcurrant jam.
