Oolan - Kerala Special
Courgette Oolan
Ingredients
250 g canned black-eyed beans /Half cup black-eyed beans
2 cups water
2 courgettes (diced)
1 tsp ginger paste
1/4 tsp turmeric powder (optional)
3 green chillies ( half slit)
1 cup coconut milk
Salt to taste
Curry leaves
Method
Pressure cook the black-eyes beans in 1½ cups water and keep aside.
Cook courgettes with chillies, ginger, salt and 1 cup water.
Add the cooked beans and allow to simmer for a while.
Add coconut milk & garnish with curry leaves.
Oolan is prepared for Onam. In kerala we use ash gourd.
