Kerala Style Cabbage Stir Fry.

Ingredients
1/2 cabbage thinly sliced
2 onions thinly sliced
2 tbsp dessicated coconut/ freshly grated coconut
2 green chillies (half slit)
1/2 tsp turmeric powder
1 tsp salt
1 tbsp oil.
1 tsp mustard seeds
1 tsp urud dal seeds
1/2 glass water
Curry leaves
 
Method
Mix the first six ingredients in a large bowl.
Heat oil in a skillet & add mustard seeds.
When it pops, add urud dal seeds.
When it turns light golden brown, add the cabbage.
Fry for 5 min & add water.
Cover & cook for another 5mn.
Garnish with curry leaves & serve with rice.

Hungarian Goulash

Goulash

Ingredients
1 kg diced beef
500 g sliced onions
3 garlic cloves
4 carrots, cut in coins
4 potatoes, peeled & cubed
2 tbsp tomato puree
Salt to taste
Oil for frying
1 tsp paprika ( kashmir chilli powder)
1 tsp caraway seeds ( perumjeerakam)
2 bayleaves / coriander leaves

Method
Warm the oil in a casserole.
Add bay leaves & then sliced onions
.
When it turns golden brown, add diced beef.
Then add garlic, paprika, tomato puree & carrots.
Stir for a while & add water .
Simmer & cook for 1h, stirring from time to time.
When half cooked, add potatoes.
If beef is cooked thoroughly, remove from fire.
Garnish with coriander & caraway seeds.
Goes very well with pasta.

Courgette-Dal Curry

Courgette - Parippu Curry

Ingredients
1/2 tsp cumin seeds
1/4 tsp turmeric powder
2 tbsp grated coconut
2 courgettes (Zucchini / Italian squash)
1 cup lentils (parippu)
1 garlic clove
1 tsp cumin seeds
1/2 tsp chilli powder
1/4 tsp tumeric powder

1 tsp salt
For seasoning
1 tbsp grated coconut
1 tsp musturd seeds
1 dried red chilli
curry leaves
Method
Grind the first three ingredients into smooth paste & keep aside.
Peel courgettes & cut into small pieces.
Cook lentils with sufficient amount of water with garlic & cumin seeds.
When lentils are medium cooked add cubed courgettes , salt & chilli powder.
When the courgettes are cooked, add ground coconut paste. Stir well.
Remove from fire & let it cool.
Heat oil in a pan. Splutter musturd seeds,curry leaves & 1 tbsp grated coconut.
When it turns golden brown add to the dal curry.
Garnish with fresh curry leaves & cumin powder .
Serve with rice.

Parippu Curry with coconut is a Kerala speciality.
You can prepare this curry without coconut paste .
Instead of  courgettes you can use  plantain / pumpkin / yam / papaya
.

Ingredients
375g condensed milk (1 tin)
100g butter
2 glasses of milk powder
A pinch of saffran / yellow colour
1/2 tsp cardomom powder
Method 

Melt butter on medium heat.
Add milk powder & condensed milk & mix well.
Stir continuosly on  medium heat.
When the mixture becomes thick add cardomom powder powder.
Remove from heat & let it cool for 15mn.
Make small balls & press in the middle with your thumb.

Spring Rolls for Chinese New Year

Spring Rolls

Ingredients
Spring roll wrappers
Cooked rice vermicelli
Coriander leaves & Soya sprouts

Filling
250 g minced meat
2 onions(chopped)
2 cloves of garlic + a piece of ginger (make a paste)
1 green chilli
1 tbsp masala powder
1/2 tsp red chilli powder
1/4 tsp turmeric powder
Coriander leaves
Salt to taste

Method
Heat oil in a sauce pan.
Fry onions till light golden brown.
Add ginger- garlic paste & fry again.
Then add masala,salt & minced meat.
Add some water & cook for 10 min.
Garnish with curry leaves & ground pepper.
Remove from fire & Keep aside.

Take a wrapper & soak in luke warm water for 2mn.
Place this wet wrapper on a damp cloth..
Place the filling ( meat+soya sprouts+vermicelli) & fold it.
Repeat the process with others
Heat oil in a saucepan & deep fry the spring rolls.
Keep frying until it becomes crispy.
Serve hot with salad leaves & dipping sauce.
