Salty & Spicy Cake

Ingredients

125 g yogurt
150 g flour
2 tbsp olive oil
2 tsp baking powder
4 eggs
1 tsp salt
1/2 cup ham ( finely sliced)
5 pitted olives (finely sliced)
2 shallots (finely chopped)
1 red chilli (finely chopped)
Curry leaves (finely chopped)
Chopped walnuts / almonds

Method

In a bowl
beat eggs.
Sieve the flour and baking powder together and fold into the egg  mixture.
Add yogurt & olive oil & mix well.
Stir in ham, olives, shallots, chilli, nuts & curry leaves.
Pour the batter into the greased cake pan (rectangular).
Bake for 45 mn - Th 180°C.
Serve as a starter.

Ingredients

1 bowl chopped brocoli (steam /MWcooked )
2 green chillies (chopped)
2 shallots (chopped)
A piece of ginger (chopped)
2 eggs
500 g flour
1 tbsp olive oil
1 tsp salt
Chopped curry leaves
Water for kneading
Oil 
Method

Wash , chop & steam cook brocoli.
Mix all the other ingredients & keep aside 1 hour.
Make evenly sized balls.
Take a lemon sized ball & flatten it using a roller.

Heat non stick pan . Spread oil on it .
Cook the roll out paratha.
Spread some oil & press the edges.
Flip &  cook the other side.
Repeat the process with other balls.
Serve hot with veg / non veg curry.

Jack- Tapioca pearl payasam

Ingredients
1/2 cup sago
1 cup chopped jackfruit
8 cubes of jagerry
2 cups of coconut milk
A pinch of salt
1/4 tsp cardomom powder
Raisins & Cashews
Ghee
Method
Gently heat jaggery & water to make a thick syrup.
Strain it & keep aside.
Roast Sago in  ghee.
Stir in water & cook  until it becomes trasparent.
Then add chopped jack fruit.
When cooked, add jagerry syrup & stir well.
Then add coconut milk. 
Add a pinch of salt,cardomom powder.
Decorate with fried raisins & cashews



In Kerala, we used to decorate with roasted coconut pieces.

Vishu is an important festival of Kerala which  falls on April 14th. 
It's the Malayalees New year.
At dawn , elderly lady of the family prepares "
Vishukani".
She arranges silk, coins, gold, rice grains,9 grains called "navadanyam',coconut, arecanut, seasonal fruits & vegetables of Kerala along with yellow konna flowers & betal leaves. 
Then she lits a lamp " Nilavilakku" & incense.
Neyyappam - a sweet snack is specially prepared for this occassion.
All these auspicious articles are arranged before Lord Krishna.
Then she calls one by one of the family  members to see Vishukanni.  ie prosperity for the coming year.
Head of the family gives money "Vishu Kaineettam " to the kids.
Then its time for fire works.
The next day is the "Vishu Sadya" served on banana leaf.

Ingredients
250g rice powder
250g jaggery
3 tbsp water
1 cup mashed  bananas
2 tbsp flour
1 tbsp black sesame seeds
2 tbsp chopped coconut
1/2 tsp cardomom powder
A pinch of baking powder
Oil for frying (In kerala we use coconut oil)

Method
Gently heat jaggery & water to make a thick syrup.
Strain it & keep aside.
Heat a sauce pan with butter.
Fry chopped copra until golden brown. Keep aside.
In a bowl mix  mashed banana, jaggery syrup,baking powder & flour.
Stir in water to make a thick consistency & keep aside for one hour.. 
.Add cardomom powder & mix well.
Heat plenty of oil.
Gently pour one spoon full of the batter.
Splash hot oil on the top.
Turn over & fry the other side.
Remove using a slotted spoon & drain on a kitchen paper.
Ur Neyyappam  is ready for Vishu !

Chocolate Cake

Ingredients
125 g flour
125 g sugar
125 g butter
3 eggs
3 tsp baking powder
200 g black chocolate
2 tbsp water

Glaçage

120 g chocolate,
3 tbsp water
30 g butter
2 tbsp icing sugar 
Method
Break the chocolate bar & add 2 tbsp water.
Melt in microwave oven 2 mn.
Abb butter & mix well.
In another bowl
beat eggs & sugar.
Sieve the flour and baking powder together and fold into the cake mixture.
Add chocolate butter mixture & mix well.

Pour the batter into the greased cake pan(oval).
Bake for 45 mn - Th 180°C.

Decoration

Glaze the cake & decorate with candies as shown in photo.

Ingredients
250g cherry tomatoes (chopped)
5 shallots (chopped)
1 tsp chilli powder
1/4 tsp turmeric powder
1 tsp musturd seeds
1 tsp urud dal seeds
Curry leaves / coriander leaves
A pinch of asafoetida
1 tsp honey
Salt to taste

Method

Heat oil in a pan. Splutter musturd seeds.
Add urud dal & fry .
Fry chopped onions till light golden brown.
Add chilli powder, tumeric powder & salt.
Fry for a while & add chopped tomatoes.
Add water & simmer for 10mn.
Garnish with fresh curry leaves & asafoetida.
To reduce acidity & add honey. 
Serve this fantastic dipping sauce with Dosa /Idli / Parathas.
