Canada place is a building with white sails, situated on the Burrand Inlet ( Crique de Burrand) waterfront of Vancouver.

Sweet Carrot Balls

Ingredients
2 cups grated carrots
1 cup sugar
70 g butter / ghee
1 glass of milk
1/2 tsp cardomom powder
15 plain biscuits (powdered)

Method
Melt ghee & fry grated carrots.
Add  sugar & milk .
Stir continuously over medium heat.
When the mixture thickens, add biscuit  powder.
When it leaves the sides of the pan, remove from fire .
Add cardomom powder & m
ix well with a wooden spatule. 
Cool & shape into ladoos.

Diwali - Fête de la lumière.

                                                      Happy Deepavali                                  

Deepavali - the festival of lights is celebrated all over India.
Deepavali is derived from two sanskrit words Deepa (light) & Avali (row).
There are so many stories behind "Deepavali".

SreeKrishnaLord Indra told Sree Krishna the evils of the demon King Narakasura.ie He kidnapped beautiful girls to serve him. So Lord Krishna & his wife Sathyabhama decided to kill Narakasura. To celebrate their King's victory the people of  Dwaraka (Kingdom)prepared several sweets. Freed young girls lit lamps to celebrate their liberty.

Lord Rama's return to Ayodya (Kingdom) with his wife Sita & brother Lakshmana, after his 14 years of exile.
People greeted their King by litting lamps and bursting crackers.

Mediterranean Pulao

Ingredients

1 bowl cooked rice (basmati)
2 onions (chopped)
Chopped capsicum (optional)
2 green chillies
4 garlic cloves
1 tbsp concentrated tomato
2 tbsp olive oil
Salt to taste
Basil leaves

Method
Heat olive oil in a  sauce pan.
Fry chopped onions & till translucent.
Then add the crushed garlic & sliced chilli.
Add concentrated tomato , salt .
Fry for some time & add some water ..
Cover & cook for some time.
Then add cooked rice.
Stir well so that the sauce is mixed with the rice.
Garnish with chopped basil leaves.
Serve hot with Raita & Chutney.

Sweet potato Cake

Sweet potato Cake

Ingredients
100g butter
120g sugar
70g flour
60g almond powder
2 medium sized sweet potatoes (cooked & mashed)
3 eggs
2 tsp baking powder
A pinch of salt
1/4 tsp cinnamon powder
1/4 tsp nutmeg  powder
Raisins & walnuts (optional)

Method
Preheat the oven to 180°C.
Cream together the butter, sugar & salt .
Add beaten eggs.
Sieve the flour and baking powder together and fold into the cake mixture.
Add mashed sweetpotato, & cinnamon powder
Pour the batter into the greased cake pan.
Bake until a toothpick inserted into the middle of the cake comes out clean, about 35-40 mn.

Horseshoe Canyon is situated in the Alberta province, 17km southwest of Drumheller. These geographical layers were laid down in Cretaceous period . 70 million years ago dinosaurs roamed around  this region. In 1743, French Canadian explorers François & Louis-Joseph de la Verendrye described this haunting landscape of mesas, buttes & coulees as " mauvaise terres" / "badlands".

Semiya Payasam - Kerala Special.

Ingredients
1 cup angel hair pasta (brocken vermicelli)
1 cup milk 
1/2 cup condensed milk
1/2cup sugar
A pinch of salt
A pinch of saffron
1/4 tsp cardomom powder
Raisins
Almonds / Cashews
Ghee
Method
Gently heat ghee in thick bottomed  vessel.
Fry vermicelli until light golden brown.
Stir in milk & cook  for 10mn.
When cooked, add sugar & condensed milk
Mix saffron with 2tbsp milk & add to the payasam
Add a pinch of salt,cardomom powder & stir well.
If the payasam is thick, add some more milk.
Decorate with fried Cashews & Raisins.

Plantain Kofta Curry

Ingredients
2 shallots
A small piece of ginger
2/3 garlic cloves
1 green chilli
Few curry leaves

1 medium size plantain (raw banana)
2 tbsp gram flour
1 cinnamon stiick
2 cloves
2 onions (thinly sliced)
2 tomatoes (thinly sliced)
1 tsp ginger+garlic paste
1 tbsp coriander powder
1/2 tsp chilli powder
1/4 tsp turmeric powder
1/2 tsp garam masala
Curry leaves
Salt to taste
Oil for frying

Method
Wash, peel & cut plantain in chunks.
Cook for 10-15 mn in salt & water.
When cooked, drain water mash it & keep aside.
Coarsely grind first five ingredients & add to the mashed plantain.
Add gram flour & mix well.
Keep aside for half an hour.
Make small balls of prepared mixture & deep fry them in oil.
Turn over & fry the other side.
Remove using a slotted spoon & drain on a kitchen paper.

Heat oil in another pan .
Add cinnamon & cloves.
Then add sliced onions & fry till light golden brown.
Add the ginger+ garlic paste.
Fry for a while & add all the powders (coriander+ chilli+turmeric)
Then add sliced tomatoes, salt & water.
Cover & cook for a few minuites.
They add fried plantain balls  & cook for another 5 mn.
Garnish with curry leaves & garam masala.
Goes very well with any Indian bread / Rice.
