Sweet Carrot Balls

Carrot LadooIngredients 2 cups grated carrots1 cup sugar70 g butter / ghee1 glass of milk1/2 tsp cardomom powder15 plain biscuits (powdered)MethodMelt ghee & fry grated carrots. Add  sugar & milk .Stir continuously over medium heat.When the mixture thickens, add biscuit  powder.When it leaves the sides of the pan, remove from fire . Add cardomom powder & mix well with a wooden spatule.  Cool & shape into ladoos.

Mediterranean Pulao

Mediterranean PulaoIngredients1 bowl cooked rice (basmati)2 onions (chopped)Chopped capsicum (optional)2 green chillies4 garlic cloves1 tbsp concentrated tomato2 tbsp olive oilSalt to tasteBasil leavesMethodHeat olive oil in a  sauce pan. Fry chopped onions & till translucent.Then add the crushed garlic & sliced chilli.Add concentrated tomato , salt .Fry for some time & add some water ..Cover & cook for some time. Horseshoe Canyon, Alberta, Canada

Horseshoe Canyon Fossils located at the "Canyon Viewpoint" Horseshoe Canyon is situated in the Alberta province, 17km southwest of Drumheller. These geographical layers were laid down in Cretaceous period . 70 million years ago dinosaurs roamed around  this region. In 1743, French Canadian explorers François & Louis-Joseph de la Verendrye described this haunting landscape of mesas, buttes & coulees as " mauvaise terres" / "badlands".

Semiya Payasam with Saffron - Kerala Special.

Semiya PayasamIngredients1 cup angel hair pasta (brocken vermicelli)1 cup milk  1/2 cup condensed milk1/2cup sugar A pinch of saltA pinch of saffron 1/4 tsp cardomom powderRaisinsAlmonds / CashewsGheeMethodGently heat ghee in thick bottomed  vessel.Fry vermicelli until light golden brown.Stir in milk & cook  for 10mn.When cooked, add sugar & condensed milkMix saffron with 2tbsp milk & add to the payasamAdd a pinch of salt,cardomom powder & stir well.If the payasam is thick, add some more milk. Plantain Kofta Curry

Kele Ke Kofte   Ingredients2 shallots A small piece of ginger2/3 garlic cloves1 green chilliFew curry leaves***1 medium size plantain (raw banana)2 tbsp gram flour1 cinnamon stiick2 cloves2 onions (thinly sliced)2 tomatoes (thinly sliced)1 tsp ginger+garlic paste1 tbsp coriander powder1/2 tsp chilli powder1/4 tsp turmeric powder1/2 tsp garam masalaCurry leaves Salt to tasteOil for fryingMethodWash, peel & cut plantain in chunks.
