Ingredients

1 cup semolina
1 cup date paste
1 cup ghee/ butter
1 cup milk
1 cup sugar
2 tbsp honey
Raisins

Method

Dry roast semolina for a while in medium heat & keep aside. 
Heat butter in a pan & mix date paste.
Then add milk & sugar.
Add roasted semolina & stir continousely over medium heat.
When the mixture thickens, add  honey.
When it leaves the sides of the pan, remove from fire .
Pat it onto a greased dish & cut into desired shapes.
Decorate with raisins.

Capilano Suspension Bridge is 230 ft above & 450 ft across the Capilano River. Steps onto the swaying planks takes you high above the forest floor for a thrilling encounter with the rainforests.  Then it's time for Treetops Adventure,which takes you through a series of interconnected platforms & bridges linking giant trees like Cedar, Douglas-fir &  Hemlock.
The original Capilano Bridge was built by George Grant Mackay in 1889  to access prime forest lands & was suspended on hemp rope. Today's bridge uses 2" steel cables.

Courgette Coconut Curry - Kerala Special

Courgette Coconut Curry

Ingredients
1/2 tsp cumin seeds
1/2 tsp red chilli powder
1/4 tsp turmeric powder
1 cup freshly grated coconut
2 courgettes (Zucchini / Italian squash)
2 tomatoes (chopped)
1/4 tsp turmeric powder
1 tsp salt
1 green chilli (half slit)
1/2 tsp  cumin powder
For seasoning
1 tbsp grated coconut
1 tsp musturd seeds
1 dried red chilli
Curry leaves
Method
Grind the first three ingredients into smooth paste & keep aside.
Peel courgettes & cut into small pieces.
Cook courgette in a bowl of water with chilli, salt, turmeric & tomatoes.
Add the ground coconut paste. Stir well.
Remove from fire & let it cool.
Heat oil in a pan. Splutter musturd seeds,curry leaves & 1 tbsp grated coconut.
When it turns golden brown add to curry.
Garnish with fresh curry leaves & cumin powder.
Serve with rice.

In Kerala, we use Indian cucumber (Vellerikka) & the name of this curry is "Vellerikka Benni". Instead of coconut , you can use 1 cup coconut cream/milk.

Mini Salmon Pancakes

Salmon Pancakes

Ingredients
1 canned salmon (drained)
1 tsp salt
2 shallots (chopped)
1 green chilli (chopped)
A small piece of ginger ( chopped)
2 eggs
1 tbsp baking powder
150 ml milk
150 g flour
3 tbsp olive oil
1 tsp fennel seeds
Chopped curry leaves / coriander leaves

Method
If you are using fresh salmon , cook & mince it.
In a bowl , whisk together egg +milk+ +salt.
Add chopped shallots, chillies, ginger & curry leaves.
Pour the egg mixture to the  flour & mix thoroughly  (without any lumps).
Keep aside for half an hour.
Heat a nonstick pan / griddle with little oil.
Pour a spoon full of batter.
Cover & cook until it's covered with bubbles.
Flip & cook the other side.
Serve immmedietely with a dipping sauce.

Mussel Stir fry - Kerala Special

Ingredients
3 tbsp dessicated coconut/ freshly grated coconut
3 shallots
1 tsp cumin seeds
1 green chilli
1/2tsp turmeric powder
1 tbsp water
curry leaves
***
500g mussels (frozen)
2 tbsp coconut oil / veg oil
1/2 tsp red chilli powder
1/2 glass water
1 tsp musturd seeds
1 dried red chilli

Salt to taste
Curry leaves
Method


Coarsely grind  first seven ingredients & keep aside.
If you are using fresh mussels steam cook & remove the flesh.
Clean, de-beard & cut mussels into half.
In a bowl, mix  ( grinded coconut + salt  + chopped mussels) & keep aside.
Heat oil in a skillet & add mustard seeds.
When it pops, add dried red chiili & few curry leaves.
Then add mussels & stir for a while.
Add some water.   
Cover & cook for 5mn.
Garnish with curry leaves & cumin powder.
Serve with rice or any other Indian bread.
