Coconut Pudding - Flan à la Noix de Coco.

Ingredients
1 tin condensed milk (375g)
400 ml coconut milk
4 eggs
1 tsp cardomom powder / 1 tsp vanilla essence
For caramel
4 jagerry cubes
20g butter
3 tbsp dessicated coconut
1/2 tsp cardomom powder

Method

Gently heat jaggery & water to make a thick syrup.
Strain it & keep aside.
Heat a sauce pan with butter.
Add jaggery syrup + dessicated coconut + cardomom powder.
When it becomes thick, remove from fire. 
Pour 1tbsp of the coco mixture at the bottom of the  greased ramekins.
Beat eggs & keep aside.
Mix condensed milk & coconut milk .
Then add beaten eggs & essence.
Mix until smooth &  pour it into greased ramekins.
Steam cook for 30-35 min, until it sets.
Remove from fire & set aside to cool.
Decorate with cashews & raisins.


This is the famous desert of the French Islands. "Flan antillais" is similiar to our Vattalappam.Instead of cardomom , you can use cinnamon/ nutmeg powder.You can replace jaggery with cane sugar.

Diamond Cuts for X'mas - Kerala Special.

Ingredients

150 g flour
150g corn flour
50g butter
1/2 tsp baking powder
A pinch of salt
Luke warm water
1 tbsp black sesame seeds
Oil for frying

For syrup
1/2 tsp cardomom powder / vanilla essence
1 cup sugar
1 cup water

Method
Sieve flour, salt  & baking powder.
Boil water with butter.
Add this to the flour to get a stiff dough.
Close the bowl with a damp cloth & keep aside.
Take an orange sized dough ball & roll out into thin disc.
Using a sharp knife, cut into 1 inch strips & then to diamond shapes.
Repeat the process with theremaing dough.
Deep fry diamond cuts till it turns golden brown.
Remove using a slotted spoon & drain on a kitchen paper.
Prepare the syrup & toss the diamond cuts in it.
Ur " Pottiyappam" is ready for X'mas.
Store them in an airtight container.

Spicy Scotch Eggs

Ingredients
250 g hamburger meat
2 onions(chopped)
2 cloves of garlic + a piece of ginger (make a paste)
2 green chillies(chopped)
Curry leaves / coriander leaves (chopped)
Salt to taste

4 hard boiled eggs
Bread crumbs
1 beaten egg
Oil for frying

Method
Mix all the six ingredients & keep for an hour in refrigerator.
Take an hardboiled egg & cover uniformly with the meat mixture.
Dip in beaten egg &  roll in bread crumbs.
Dip once more in egg & roll in crumbs.
Repeat the same with other eggs.   
Deep fry them in a pan or in deep fryer.
Remove using a slotted spoon & drain on a kitchen paper.
Serve  these spicy scotch eggs as a starter with a dipping sauce.

The Gastown Steam Clock, Vancouver.

Gastown was Vancouver's first downtown named after "Gassy Jack", a steamboat captain who arrived in 1867 to open a saloon.
Gastown's most famous landmark is it's steam powered clock. This glass & bronze clock plays the chimes of Big Ben every quarter hour .

Spicy French Toast

Ingredients
3 eggs
1 glass of milk
2 green chillies (chopped in circles)
1 big onion ( finely chopped)
A piece of ginger ( finely chopped)
Curry leaves (finely choped)
Salt to taste

4 slices of bread
Ghee/butter
Method
Cut the bread slices in rectangle/ triangle shape.
Beat eggs with all the chopped ingredients.
Dip the bread slices in the egg mixture.
Heat a non stick pan & grease with butter.
Fry the slices. Spread  a spoon full of onions & chillies on the top of the slice.
Gently flip & fry the other side.
Serve immedietely with tea.

Egg Biriyani

Ingredients
2 green chillies
4 garlic cloves
A piece of ginger
9 mint leaves
1 tbsp coriander powder
1/2 tsp turmeric powder
2 big tomatoes (sliced)
3 big onions (sliced)
50 g butter / ghee
1 Cinnamon stick
1 star anise
2 cloves
3 cardomom pods
Coriander leaves
1 tsp garam masala
Salt to taste
4 hard boiled eggs

4 cups Basmati rice
6 cups water
1 tsp salt
1 cinnamon stick
3 cardomom pods
1 star anise
1 bay leaf
3 cloves.
3 tbsp ghee / oil

Method
Chop first four ingredients (green masala) using a chopper & keep aside.
Heat butter in a sauce pan.
Add the spices-cinnamon ,star anise, cloves & cardomom pods.
When aroma rises , add chopped onions & fry till translucent.
Then add the green masala & fry for few minutes
Add coriander powder & fry for a few minutes.(to avoid raw smell).
Then add the sliced tomatoes & fry again.
A
dd some water .
Simmer & cook for 10mn.
Add the hard boiled eggs.
Cover & cook for another 5 mn.
Garnish with garam masala & coriander leaves.
Keep aside.

Boil water, add salt & keep aside.
Heat ghee in a sauce pan. Add Cinnamon, cardomom,star anise & cloves.
When aroma of the spices rises add basmati rice.
Stir continously .
When some rice grains change to light brown, add boiled water.

Bring to the boil, cover tightly and simmer until the rice is tender and the water has been absorbed.
Reduce the heat.
When rice is 3/4 cooked remove from fire .
Close the lid tightly . Stir occassionaly with a wooden spatule.
When fully cooked remove the lid & let it cool.

Mix the egg masala with the cooked rice.
Stir with a wooden spatule.
Garnish with coriader leaves & garam masala.
Serve hot with Raita & Chutney.

Punjabi Samosas

Vegetable Samosas
( Potato stuffed pastry)

Ingredients for pastry

1 cup flour
1 tbsp semolina
1 tbsp oil
1/2 tsp salt
Luke warm water
Method
Prepare potato baajii & keep aside.
Mix all the ingredients in a bowl.
Add sufficient amount of water to get a stiff dough.
Cover the bowl with a damp cloth & keep aside for 20mn.
Knead the dough again & make small balls.
Roll out into a circle & cut into haf with a sharp knife.
Fold it into a cone shape & fill it with 1 tbsp potato filling.
Seal the edges with a little water & just twist the three corners.
Deep fry the samosas in a pan or in deep fryer.
Serve hot with a dipping sauce & tea.
