Coconut Pudding - Flan à la Noix de Coco.

Coconut Pudding Ingredients1 tin condensed milk (375g)400 ml coconut milk4 eggs1 tsp cardomom powder / 1 tsp vanilla essenceFor caramel4 jagerry cubes20g butter3 tbsp dessicated coconut1/2 tsp cardomom powderMethod Gently heat jaggery & water to make a thick syrup.Strain it & keep aside. The Gastown Steam Clock, Vancouver.

Gastown Steam ClockGastown was Vancouver's first downtown named after "Gassy Jack", a steamboat captain who arrived in 1867 to open a saloon. Gastown's most famous landmark is it's steam powered clock. This glass & bronze clock plays the chimes of Big Ben every quarter hour .

Spicy French Toast

Spicy French ToastIngredients3 eggs1 glass of milk2 green chillies (chopped in circles)1 big onion ( finely chopped)A piece of ginger ( finely chopped)Curry leaves (finely choped)Salt to taste4 slices of breadGhee/butterMethodCut the bread slices in rectangle/ triangle shape.Beat eggs with all the chopped ingredients.Dip the bread slices in the egg mixture.Heat a non stick pan & grease with butter.Fry the slices. Punjabi Samosas

Vegetable Samosas ( Potato stuffed pastry) Ingredients for pastry1 cup flour1 tbsp semolina1 tbsp oil1/2 tsp saltLuke warm waterMethod Prepare potato baajii & keep aside.Mix all the ingredients in a bowl.Add sufficient amount of water to get a stiff dough.Cover the bowl with a damp cloth & keep aside for 20mn. Potato Baaji

Potato BaajiIngredients4 medium size potatoes (Quartered)2  onions (thinly sliced)2 green chillies (half slit)A piece of ginger (chopped)2 carrots (chopped)A handfull of green peas (optional)1/4 tsp turmeric powder1 tsp musturd seeds1 tsp urud dal seedsCurry leaves / coriander leavesSalt to tasteMethod Boil the quartered potatoes in salted water until tender (20 mn).Drain & let it cool.
