Green Avocado Muffins

Ingredients

1 ripe avocado / butter fruit ( mashed)
50g butter
1 cup sugar
2 cups flour
2 eggs
2 tsp baking powder
A pinch of salt
1/2 tsp cinnamon powder
Milk ( If required)
Chopped almonds

Method
Preheat the oven to 180°C.
Cream together the butter, sugar & salt .
Add beaten eggs.
Sieve the flour and baking powder together and fold into the cake mixture.
Add mashed avocado & cinnamon powder.
Stir well. If the mixture is thick add some milk.
Add the chopped almonds & stir . 
Pour 1 tbsp of the batter into silicone muffin pan.
Bake until a toothpick inserted into the middle of the muffin comes out clean, about 25-30 mn.
Serve these green muffins with tea.

Lady's finger Curry - Kerala Special.

Vendakka  Curry

Ingredients
250g lady's finger / Okra
1 big onion (chopped)
2 big tomatoes (chopped)
1 tsp ginger paste
1 tsp garlic paste
1/2 tsp red chilli powder
1/4 tsp turmeric powder
1/2 cup coconut milk
1/2 tsp pepper powder
Curry leaves


Method

Heat oil in a pan & fry chopped onions to light golden brown.
Add chopped okra's & fry again.
Add ginger-garlic paste + salt + chilli powder +turmeric powder.
Stir for a while & then add chopped tomatoes.
Then add a cup of water. 
Cover & cook on low fire for 10 min.
When cooked, add coconut milk & just swirl the skillet.
Garnish with fresh curry leaves & freshly ground pepper.
Serve with rice.

Sweet potato - Bread Pudding

Ingredients
1 medium sized sweet potato
1/4 of French Baguette / 3 slices of bread
2 eggs
1 cup coconut milk
3 tbsp sugar
50g butter
1 tsp nutmeg powder
Raisins & Walnuts

Method
Wash , peel & cube the sweet potato.
Boil the cubed potatoes in water until tender (10 mn).
Drain & let it cool.
Add butter, mash it & keep aside.
Soak bread in coconut milk for 5 mn.
When completely absorbed, crush it.
Add beaten eggs, sugar & mashed sweet potato.
Mix well  & then add raisins and walnuts.
Next add nutmeg powder & stir the mixture.

our it into greased ramekins .
Steam cook for 30-35 min, until it sets.
Remove from fire & set aside to cool.

Hoodoos, Alberta, Canada

The Hoodoos

Hoodoos site is located 16 km south of Drumheller. Hoodoos are strange pillars resting on a thick base of shale that's capped by a large rock. Fossilized dinosaur bones found in this region are in the Royal Tyrrell Museum.  This yet eerie landscape of the Canadian Badlands can be seen in Drumheller, East Coulee, Lehigh, Cambria, Rosedale, Wayne & Nacmine. The Dinosaur Provincial Park is a United Nations World Heritage site.

Ingredients
250g date paste
2 bananas (mashed)
8 jagerry cubes
1 cup ghee/ butter
1/2 tsp cardomom powder
Almonds
Method
Gently heat jaggery & water to make a thick syrup.
Strain it & keep aside.
Melt ghee & add date paste.
Stir well & then add mashed bananas + strained jaggery syrup.
Stir continousely over medium heat.
When the mixture thickens, add cardomom powder
When it leaves the sides of the pan, remove from fire .
Pat it onto a greased dish & cut into desired shapes.
Decorate with almonds / cashews.

Ingredients
1 cup red letils ( les lentilles corail)
5 shallots ( finely sliced)
A bunch of Corn salad / Mâche
1/2 tsp red chilli powder
1/4 tsp turmeric powder
Salt to taste
1 tsp cumin (crushed)
Ghee for frying
Curry leaves

Method

Cook lentils in unsalted water over medium heat.
Fry shallots till light golden brown.
Add cooked lentils + chilli powder+ turmeric powder + salt.
Stir well & add chopped lamb lettuce.
Cover & cook for just 2 mn.
Garnish with cumin powder & curry leaves.

Banana fritters - Kerala Special.

Ingredients
2 ripe plantain
Oil for frying.

For Batter
250g flour
(For crispy fritters , take 125g flour+125 g corn flour)
2 eggs
3 tbsp sugar
20g butter(melted)
30 cl luke warm water
A pinch of salt
1/2 tsp baking powder
1/2 tsp cardomom powder/ vanilla essence

Method

In a bowl , whisk together egg +water+sugar +salt.
Pour the egg mixture & butter to flour & mix thoroughly  (without any lumps).
Keep aside for half an hour.
Add cardomom & stir well .
Peel, half & slice the bananas lengthwise.
Heat oil in a frying pan over medium heat.
Dip the banana slices in the batter & deepfry them until golden brown.
Serve this snack with a cup of tea.

It's pancake day / C'est la Chandeleur

French Pancakes

Ingredients

150 g flour (Type 45)
75 g sugar
25 g melted butter
3 eggs
a pinch of salt
1/2 l milk
1 tsp vanilla essence

Method

Mix first five ingredients (without any lumps) in a bowl .
Add milk & stir again. Keep aside for half an hour.
If the batter is thick, add some more milk.
Heat a nonstick pan / griddle with little oil.
Pour a spoon full of batter & spread it.  (in a circular way)
Cook on both sides .   
Eat with the topping of ur choice.


On Feb 2nd, French celebrates la Chandeleur / Candelmas ( Feast of Candles). On this day they prepare pancakes - crêpes. So It's also called pancake day.  According to the tradition , take a coin in the left hand while flipping the pancake in the air. If the pancake lands back in the pan , there's good luck  for the flipper in the coming year. So get ready to prepare pancakes :)
