Ricotta Cake topped with Walnuts

Ingredients
250g Ricotta Cheese
150g flour
150g sugar
2 egg whites
1/2  tsp nutmeg powder
50g butter
2 tsp baking powder
A pinch of salt
Topping
70g chopped walnuts
chopped dates + raisins (optional)
50g butter
2 egg yolks
2 tbsp milk
1 tsp cinnamon powder

Method
Preheat the oven to 180°C.
Cream together the butter, sugar , salt & cheese .
Sieve the flour and baking powder together and fold into the cake mixture.
Add beaten egg whites.
If the batter is thick add some milk.
Pour the batter into the greased cake pan & cook for 20 mn.
Prepare topping by mixing egg yolks + sugar+milk + chopped nuts.
Add cinnamon powder & stir well.

Remove the cake from the oven. (after 20 mn).

Spread uniformly the topping mixture using a spatule.
Return to the oven for another 20mn ( temp 200°).
Bake until a toothpick inserted into the middle of the cake comes out clean.
Serve with tea.
