500 g frozen scallops
1 tsp salt
1/2 tsp red chilli powder
1/4 tsp turmeric powder
1 cinnamon stick
2 big onions (sliced)
2 big tomatoes (sliced)
2 chillies (half slit)
2 cloves of garlic(chopped)
2 tsp chopped ginger
1 cup coconut milk
Curry leaves / Coriander leaves
Salt to taste
Oil for frying
Thaw frozen scallops by running coldwater over them.
Then blot dry with kitchen paper.
Marinate them with tumeric,chilli & salt & keep aside.
Heat oil in a pan & fry cinnamon stick, cloves.
Then fry sliced onions & curry leaves.
Add ginger paste, chillies& fry again.
Then add sliced tomatoes & a cup of water..
Cover & cook for 8 mn.
When cooked, add marinated scallops in the bubbling sauce
Simmer & cook for another 5mn.
Keep on low fire, add coconut milk & just swirl the skillet.
Garnish with curry leaves & remove from fire.
Serve this delicious curry with Indian bread / Rice.
