Le Fiadone - Corsican Cheese Cake
Le Fiadone
Ingredients
150 g Spéculoos(cinnamon biscuits)
50g butter
300g brocciu (Corsican cheese)
2 tbsp flour
150g sugar
3 eggs
1/2 tsp nutmeg powder
2 tsp baking powder
A pinch of salt
Walnuts
Method
Powder the biscuits in a blender & miw it with melted butter.
Preheat the oven to 180°C.
Cream together the cheese & sugar.
Add beaten eggs.
Sieve the flour and baking powder together and fold into the cake mixture.
Add nutmeg powder & stir well.
Pat the biscuit mixture in the bottom of the greased cake tin.
Pour the batter over it & cook for 20mn.
Remove the cake from the oven. (after 20 mn).
Place the walnuts on the top & return to the oven for another 10mn.
Bake until a toothpick inserted into the middle of the cake comes out clean.
Serve with tea.

Le Fiadone is the speciality of this region which is made of goat's cheese (Brousse/brocciu).
