Blinis - Fluffy Russian Pancake
Blinis
Ingredients
25 cl luke warm milk
1 tsp sugar
20 g fresh yeast
80g flour
80 g buckwheat four
2 eggs
Salt to taste
Method
Dilute yeast in luke warm milk with sugar.
Keep aside for 10mn
Mix both the flours & add the milk.
Then add beaten eggs & stir well .(without any lumps).
Keep aside for half an hour.
Heat a nonstick pan / griddle with little oil.
Pour a spoon full of batter.
Cook on both sides .
Eat with the topping of your choice.
( smoked salmon/ foie gras/salmon eggs/ caviar)
If you don't have buck wheat flour, use the wheat flour.
Blinis can be served as a breakfast item / as a starter.
