Malabar Christmas Cake - Rich Fruit Cake

Ingredients
50g sultana
50g raisins
150g candied fruits
25 g cashewnuts (chopped)
50g glazed cherries(chopped)
Grated lemon rind ( half lemon)
Half cup black rum

100 g sugar
2 tbsp water

250g butter
150g sugar
250g flour
5 eggs
3 tsp baking powder
A pinch of salt
1 tsp vanilla essence
1 tsp almond essence

7 cloves
2" cinnamon stick
7 cardomoms
1/2 nutmeg
Method
Soak the raisins overnight in a little rum.
Dry roast the spice & grind to a fine powder.
Make caramel using sugar & water.
Preheat the oven to 180°C.
In a bowl beat butter & sugar.
Then add beaten eggs.
Sieve the flour and baking powder together and fold into the cake mixture.
Add all the ground spices, caramel  & both the essence.
Pour the batter into the greased cake pan.
Bake until a toothpick inserted into the middle of the cake comes out clean, about 40-45 mn.
Drizzle the rum over the cake, while it's still hot.
