Jewish Synagogue, Cochin.

Paradesi Synagogue Paradesi Synagogue built in 1568 AD is the oldest Synagogue in India. This is situated next to  the Mattancherry  Palace Temple. It was destroyed by the Portuguese in 1622 AD and was reconstructed by the Dutch. "Paradesi Synagogue" means a "Synagogue built by foreigners". ( Paradesi is the  malayalm word for a foreigner). Gâteau Breton / Brittany Cake.

Gâteau Breton Ingredients300g flour 125g salted butter150g sugar3 eggs + an yolk2 tsp baking powder2 tsp vanilla essence1/2 cup rum / calvados/ milkMethodPreheat the oven to 180°C.Cream together the butter, sugar & salt .Add beaten eggs.Sieve the flour and baking powder together and fold into the cake mixture.Then add baking powder , vanilla essence & rum.Mix well & pour the batter into the greased cake pan.Refrigerate for 30mn.Then draw diamond shapes over the dough using the tines of the fork.Brush with beaten egg... Willingdon Island The Bristish  decided to construct an approach channel from deep sea to the inner harbour. The former Governor of Madras Lord Willingdon took initiative to this project under the supervision of Chief Engineer Sir Robert Bristow. Mdardara - Lebanese Rice.

MdardaraIngredients3  cups cooked Basmati rice1 cup cooked brown lentils5 scallions (chopped)A pinch of saffron / 1/2 tsp turmeric powder1 tsp ground pepperSalt to tasteCoriander leaves2 tbsp ghee / oil Garam Masala (optional)MethodHeat the oil/ ghee in a frying pan.
