Rfiss - An Algerian Sweet

Ingredients
250 g date paste
3 tbsp cane sugar
250 g roasted rice powder (riz étuvé)
100 g salted butter
5 cardomom pods
Method
Dry roast rice grains, till the grains are brown & crunchy.
Keep aside to cool & then blend into fine powder.
Blend cardomom grains with a spoonfull of sugar.
Gently heat butter & sugar in heavy bottomed pan.
Add the dates & mix well with other ingredients.
Then add roasted rice powder.
Stir well so that the powder is well mixed with dates.
Remove from fire, add cardomom powder & mix well with a wooden spatule.
Cool & shape into ladoos.
Instead of roasted rice powder, Algerians use bread crumbs/ roasted semolina.
