Oven Fried Brinjal Sticks

Eggplant Sticks

Ingredients
1 tsp red chilli powder
1/4 tsp freshly ground black pepper
1/2 tsp turmeric powder
Salt to taste
An eggplant (cut in sticks)
2 eggs (beaten)
2 cups bread crumbs
1 tsp dried herbs (herbes de Provence)
Oil
Method
Cut the eggplant into 3" sticks & keep aside.
Mix the first four ingredients with water.
Then marinate it with the eggplant sticks & keep aside for an hour.
Mix bread crumbs with dried herbs.
Dip each eggplant stick in beaten egg & then in bread crumbs.
Shake off excess & place them on a greased baking tray.
Spray each sticks slightly with a cooking spray.
Preheat oven to 180° & bake for 25 mn until they are brown & crispy.
"Crispy Crunchy Egg plant Sticks" are ready to serve.
