Mini Chocolate Canneles
Ingredients (30 mini canneles)
An egg + an egg yolk
50g black chocolate
15g chocolate powder
125g sugar
50g flour
50g butter
A pinch of salt
20 cl of milk
1 tbsp rum ( optional)
1/2 tsp vanilla powder
Method
In a thick bottomed vessel warm milk with butter.
When the butter is melted, remove from fire & add vanilla powder.
Pour this warm milk over the chocolate & mix well.
Whisk eggs with sugar.
Add flour ,chocolate mix & rum.
Mix well, cover & refrigerate overnight.
Grease the silicon cannele mold with a narrow pastry brush.
Preheat oven 210°C- Th-7.
Fill three-quarters full of the mold with the batter & bake for 30mn.
Unmold the canneles as soon as it is out of the oven.
Canneles are crispy outside & chewy inside.
They can be stored for 2/3 days - but usually it's finished within minuites:))
Canneles are the speciality of Bordeaux - a region in the SW of France.
This 300yr old French Pastry is popularly known as " Cannelés de Bordeaux".
