Almond Cake with Fresh Cherries


125g flour
125g sugar
125g butter
125g almond powder
3 eggs
2 tbsp milk
1 tsp vanilla essence
200 g Cherries
1 tsp baking powder
A pinch of salt
Icing Sugar (optional)

Remove the stalks & stones of the cherries.
Quarter them & keep aside.
Melt butter in microwave oven.
Add almond powder & mix well.
In another bowl
beat eggs & sugar.
Sieve the flour with baking powder & fold into the cake mixture.
Add butter mixture & mix well.
Add chopped cherries ,vanilla essence & just mix them.

Pour the batter into the greased cake pan.
Bake for 25-30mn - Th 180°C.
Dust the top of the cake with icing sugar before serving.
