Plantain Stir Fry - Chettinad Style

Plantain Varuval

Plantainchetti
Ingredients
1 green plantain (skinned & quartered)
1 tsp salt
1/2 tsp red chilli powder
1/4 tsp turmeric powder
3 shallots (chopped)
1 tomato (chopped)
1/2 tsp garlic paste
1/4 tsp ginger paste
Curry leaves 
1/2 tsp cumin powder

Masala
1 tbsp freshly grated coconut /dessicated coconut
1 tsp coriander seeds
2 cloves
A piece of cinnamon
1 tsp fennel seeds
1 clove
3 black pepper corns
Temper
1 tsp mustard seeds
1 dried chilli
A spring of curry leaves

 
Method

Marinate chopped plantain with chilli powder, turmeric powder & salt.
Dry roast all the masala ingredients & then grind to fine powder.
 
Heat oil in a pan.
Splutter mustard seeds & then add dried chilli along with curry leaves.
Add chopped shallots & fry till translucent.
Then add ginger & garlic along with chopped tomatoes.
Fry for a while & then add masala powder.
Then add marinated plantain & stir well.
Cover & cook for 10 mn, with sufficient amount of water.
When the sauce is dried, remove from fire.
Garnish with cumin powder & curryleaves.
