Cauliflower Kurma - Malabar Style
Cauliflower Kurma
Ingredients
2 cloves+cinnamon stick + 2 cardomom pods
1/2 cauliflower
2 carrots
2 potatoes
3 garlic cloves finely chopped
1/4 " ginger finely chopped
2 green chillies(half slit)
2 big onion finely chopped
1 tbsp coriander powder
1/2 tsp turmeric powder
1 cup coconut milk
Freshly ground black pepper
Salt to taste
Curry leaves / Coriander leaves
Oil for frying
Method
Wash & separate cauliflower florets.
Cut carrots in coins & potatoes in cubes.
Blend ginger & garlic & keep aside.
Heat oil in a saucepan & fry spices
Add chopped onions & fry them till light golden brown.
Then add chopped vegetables along with salt.
Fry them & then add coriander & turmeric powder.
Fry for a few minuites & then add ginger +garlic paste.
Add chopped tomatoes & mix well
Then add some water, cover & cook for 6 mn.
When the vegetables are done remove from fire.
Add a cup of thick coconut milk & stir well.
Garnish with coriander leaves & pepper powder.
Serve with Indian bread / rice.
