Yule Log Cake
Ingredients
4 eggs
100g sugar
100g flour
1 tsp baking powder
1 tsp vanilla essence
*Filling & Frosting*
200 g black chocolate
90 g butter
30 cl thick cream
1 tbsp marmalade
Chopped orange peel candy (optional).
Chopped almonds
Zest of an orange
Method
Preheat the oven to 180°C.
Melt butter & chocolate in a microwave oven.
Add whipped cream, marmalade & cinnamon powder.
Mix well & keep in the refrigerator for 30mn.

Whisk eggs & sugar for 10mn so that it triple it's volume.
Sieve the flour and baking powder together and fold into the cake mixture.
Spread butter paper on a baking tray & spread the batter evenly.
Bake for 10mn until sponge cake is light brown.
Remove frm oven & keep aside to cool.
Spread the chocolate filling evenly over the sponge.
Sprinkle Chopped orange peel candy & almonds.
Fold carefully so that the seam side is facing down.
Peel off the edges.
Spread the remaining chocolate over the roll.
Using a fork give an appearance of the bark.
Chill for 30mn.
Sift icing sugar over the top & decorate with Santa, holy & meringue mushrooms.
