Scrambled Eggs with Lady's Finger

Scrambled Eggs with Okra

Ingredients
2 eggs beaten
Lady's finger - 10
3 shallots (chopped)
1 green chilli (chopped)
A piece of ginger(chopped)
2 tbsp oil
Salt to taste
Pepper powder + Curry Leaves
Method
Wash & completely dry the okra's.
Cut them into thin rings.(Even the knife must be dried.)
Heat a nonstick pan with 2 tbsp oil.
Add okra & fry occassionely.
Fry chopped (shallots,ginger,chilli) for a while.
Add salt , cover & cook on medium heat.
Then add beaten eggs & stir continuosly with a wooden spatule..
When scrambled, garnish with pepper powder & curry leaves.
Make a sandwich & serve.
