Rum Raisin Tea Cake
Ingredients
4eggs
100g flour
100g butter
100g sugar
1 tsp baking powder
1 tsp vanilla essence
1 tbsp rum
200g raisins(corinte)
A pinch of salt
Method
Preheat the oven to 180°C.
Mix raisins with 2 tbsp flour & keep aside
Cream together the butter, sugar & salt .
Add beaten egg.
Sieve the flour and baking powder together and fold into the cake mixture.
Add rum, vanilla essence, raisins & mix well.
Pour the batter into the greased cake pan.
Bake until a toothpick inserted into the middle of the cake comes out clean, about 40mn.
Serve with tea.
