4 skinless chicken breasts(cut in strips)
1 tbsp rice vinegar
Salt to taste
2 tbsp ketchup
1 tbsp soya sauce
1 tbsp corn flour
5 tbsp luke warm water
1 tbsp sesame oil
A piece of ginger (chopped)
Half of 3 capsicums(red, yellow, green)
2 green chillies (half slit)
100g cashews (roasted)
Basil leaves / Coriander leaves
Sesame oil for frying
Marinate chicken with salt & vinegar.
Keep in the refrigerator for an hour.
Mix cornflour with ketchup, soya sauce ,water & oil.
Warm the oil in a pan & fry marinated chicken.
When light brown , keep aside.
Warm sesame oil in a wok & fry onions till light golden brown.
Add chopped capsicums along with ginger & green chillies.
Fry for a while & add ketchup mixture along with fried chicken pieces.
Cover & cook, stirring from time to time.
When the sauce is dried, add roasted cashews.
Garnish with basil leaves leaves & serve with rice.
