Banana Chiffon Cake

Ingredients
1 ripe plantain
200g flour
180g sugar
100 ml veg oil/  butter
4 eggs
2 tsp baking powder
2 tbsp milk
1/4 tsp cardomom powder
1/4 tsp nutmeg powder
1/2 tsp cinnamon powder
A pinch of salt
Rasins+ chopped walnuts(optional)
Method
Steam cook plantain & mash it.(use a blender)
Preheat the oven to 180°C.
Cream together the butter, sugar & salt .
Add beaten eggs & mashed banana.
Sieve the flour and baking powder together and fold into the cake mixture.
Then add baking powder, vanilla essence & cinnamon powder.
Mix well & pour the batter into the greased cake pan.
Bake until a toothpick inserted into the middle of the cake comes out clean.(30mn)
Serve with tea.
