500g button mushrooms(chopped)
2 medium onions (chopped)
A garlic clove (chopped)
A green chilli (optional)
1 tbsp flour
20cl liquid cream
1 tbsp olive oil + 10 g butter
500ml water + A stock cube
Salt to taste
Chopped coriander leaves / Parsely leaves
1 shallot (thinly sliced)
Freshly ground pepper
Oil for frying
Boil water with stock cubes & keep aside.
Heat butter + olive oil in a frying pan.
Fry shallots + garlic + chilli, till translucent.
Then add chopped mushrooms & fry for 3 mn.
Add flour & mix well.
Then add the prepared stock & mix once again.
Cover & cook till mushrooms are well cooked.
Remove from fire & stir in liquid cream.
Blend till smooth using a hand blender.
Fry shallots to light golden brown
Add some ground black pepper & then mix with the prepared soup.
Garniish with chopped coriander leaves & serve hot.
