Matlou - Tunisian / Algerian Bread.
Spicy Matlou
Ingredients
300g semolina
200g flour
3 tbsp butter/ ghee (melted)
3 tbsp yogurt
15g fresh yeast or (2 tsp dried yeast)
1 tsp sugar
Half cup luke warm milk
Salt to taste

2 shallots (chopped)
2 green chillies(chopped)
Curry leaves(chopped)
1 tsp cumin seeds
Method
Dilute yeast in luke warm water with 1 tsp sugar.
Set aside for 15 minuites.
Mix all the ingredients with the wooden spoon.
Cover the bowl with a cloth & leave for 1or 2 hours, until it's doubled.
Spray some more flour & knead it again & make orange sized balls.
Roll out into thick round shaped flat bread.
Heat a non stick pan & just smear some oil.
Cook the roll out matlou.
When it turns brown, flip & cook the otherside.
Repeat the same with other dough balls.
Serve these thick flat breads with veg / non veg curries.
