Chocolate Muffins with Mascarpone

Chocolate Muffins


Ingredients
125g mascarpone cheese
180g black chocolate
100g sugar
50g flour
4 eggs
A tsp baking powder
1 tsp cinnamon powder
Topping
 2 tbsp mascarpone
4 tbsp icing sugar
1/2 tsp vanilla essence
Method
Preheat the oven to 180°C.
Mix mascarpone with sugar.
Break the chocolate bar & add 2 tbsp water.
Melt in microwave oven 2 mn.
Add melted chocolate with the mascarpone mixture.
Mix well & then add beaten eggs.
Sieve the flour and baking powder together and fold into the cake mixture.
Add cinnamon powder & mix well.
Pour the batter into the greased 12 hole muffin tray.
Bake for 15- 20mn until risen.

Mix mascarpone with icing sugar & vanilla essence.
Top the muffins with this & decorate with fresh strawberries.
