Rabbit Cacciatore - An Italian Dish

Ingredients
1 kg Rabbit(chopped)
1 tsp kashmir chili powder
1/2 tsp turmeric powder
Salt to taste

1 tbsp flour

1 spring of rosemary
2 springs of thyme 
2 onions(thinly sliced)
100g button mushrooms (sliced)
2 carrots(julienned)
1 green chilli(half slit)
2 potatoes (julienned
3 garlic cloves (chopped)
1 cup tomato puree
Half cup white wine
Salt to taste
1 vegetable stock cube
5 tbsp olive oil / vegetable oil
Coriander leaves
Freshly ground black pepper
Method
Marinate rabbit pieces in chilli, turmeri & salt.
Keep in the refrigerator for an hour.
Dredge the rabbit pieces in flour.
Dilute the stock cube in a bowl of water.
Heat oil in a sauce pan & fry them(both sides).
When golden brown drain in a kitchen paper & keep aside.
Heat oil in a sauce pan & fry mushrooms & potatoes for 5 mn. Keep aside
Heat oil ia pan.
Add the springs of rosemary & thyme.
Then add sliced onions till translucent.
Add carrots &  chopped garlic & green chilli.
Fry for a while & then add tomato pureee & wine.
Bring to boil & then add fried rabbit pieces.
Stir for a while & then add vegetable stock .
Bring to the boil & then turn the heat down.
Simmer for 20mn, stirring from time to time.
When the rabbit is cooked, add fried mushrooms & potatoes. 
When potatoes are cooked, remove from fire.
Garnish with freshly ground black pepper & coriander leaves.

In Italian  "Rabbit Caccatoire"  means  Hunter's Wife's Rabbit.
