Caramelized Banana Cake
Ingredients
3 ripe plantains (cut in coins)
3 cubes of jaggery
1/4cup water
20g butter
1/4 tsp cardomom powder

3eggs
150g flour
100g butter
100g sugar
1 tsp baking powder
1/2 tsp cinnamon powder
A pinch of salt
1/2 tsp vanilla essence
Method
Preheat the oven to 180°C.
Gently heat jaggery & water to make a thick syrup.
Strain, add cardomom powder & stir well.
Grease the cake tin & evenly spread the prepared syrup.
Peel & chop plantains in 1 inch thickness.
Arrange them over the jaggery syrup.
Melt butter in a microwave oven.
Cream together the butter, sugar & salt.
Add beaten egg & mix.
Sieve the flour and baking powder together and fold into the cake mixture.
Then add cinnamon powder & vanilla essence.
Pour the prepared mixture over the bananas.
Bake until a toothpick inserted into the middle of the cake comes out clean(35mn).
Remove from fire & set aside to cool (5 mn)
Cover the baking tray with the serving plate & gently turn.
Serve warm with a scoop of ice cream.
