Spicy Cheese Scones
Ingredients (12 scones)
270 g flour
70g grated Emmentel cheese
1 tbsp thick cream
1 tsp baking powder
2eggs + an yolk
60g butter
2 shallots (finely chopped)
A piece of ginger (finely chopped)
1 red chilli (finely chopped)
Curry leaves (finely chopped)
1 tsp cumin seeds
Salt to taste
Oil for frying
Method
Preheat oven to 180°C.
Fry chopped shallots to light golden brown;
Add chopped ginger, chilli, fennel seeds & curry leaves.
Remove from fire & keep aside.
Sieve the flour and baking powder together.
Add chopped butter to the flour.
With the fingers rub them to get a crumb mixture.
Add grated cheese & thick cream.
Then add fried shallots mix & knead gently.
Make small balls & flatten them in the greased 12 hole muffin tray.
Brush the top with egg yolk & bake for 20mn until risen & golden-brown.
Serve as a starter with foie gras / cream cheese.
