Roasted Guinea Fowl

 Roasted Guinea Fowl

Ingredients
1Guinea Fowl
1 cinnamon stick
2 green chillies (half slit)
A piece of ginger(chopped)
1/2tsp turmeric powder
*To marinate*
 2 tsp chilli powder
1 tsp turmeric powder
1/2 tsp fennel seeds powder
1/2 tsp garam masala powder
1/2 tsp black pepper powder
1 tbsp veg oil
Salt to taste 
   ***
Chestnuts (bottled)
2 branches of Rosemary
20 g butter
5 potatoes (sliced)
Salt to taste
Method
Pressure cook(10 mn) the bird with first four ingredients
Then marinate the cooked bird & keep aside for an hour.
Fill the cavity with chestnuts & rosemary.

Preheat oven to 180°.
Place the marinated bird on a greased baking tray.
Roast the bird so that the breast-side is up. 
Arrange the sliced potatoes around it & insert butter slices near the legs.
Bake for 30 mn .
Sccop up the juices with a spoon & drizzle over the bird while it is roasting. 
Ur Roasted Guineaa Fowl is ready to serve.
