Kaiserschmarrn - Austraian Emperor's Pancake

Ingredients
30g raisins + 2 tbsp rum
125g flour
300ml milk
30g sugar 
40g butter (frying)
4 eggs(separated)
 A pinch of salt
75g vanilla sugar 
Sugar & toasted almond flakes
 
Method
Soak the raisins in the rum & keep aside.
 Mix flour with milk, egg yolks ,& salt (without any lumps).
Add soaked raisins &stir.
Then beat egg whites with sugar until stiff.
Add to the batter & just stir.
Heat a nonstick pan with a cube of butter.
Pour a ladle full of batter.( a thick pancake)
Cover the pan with a lid.
When cooked, cut into squares.
Flip each squares & cook the other side.
Repeat the same with remaining dough.

 Kaiserschmarrn's are ready for the Pancake Day !!!
Top them  with sugar & toasted almond flakes.
Serve hot with stewed plums.

There are several stories about the origin of these pancakes.

Austrian Emperor Francis Joseph I (1830-1916) got lost on an hunting expedition. Tired and hungry, he was offered these pancakes by a farmer's wife. When he praised, the lady said that it was just "schmarrn". Emperor in return said that it is  Kaiser's schmarrn (Emperor's mess).
Austrian Emperor's wife Elisabeth of Bavaria (Sisi) was obsessed with maintaining her figure. So she ordered for low fat desserts. One day Royal chef prepared these rich pancakes & the Queen refused to eat them. But the Emperor enjoyed his portion & ate hers too. Thus "Kaiser-Schmarrn" became the popular dessert of Austria.
