Spicy Mussel Gratin

Ingredients
15 mussels (big ones)
Topping
2 egg yolks
1 tbsp musturd paste
A green chilli(chopped)
2 cloves of garlic( chopped)
A shallot(chopped)
A pinch of saffron(optional)
Curry leaves (chopped)
Bread crumbs
 
* Preparing Mussels*
Shells must be scrubbed in water with a stiff brush to remove any barnacles & sand.
Just warm them in a sauce pan with somewater.
When just open , remove from fire.
With a knife open the shell, cut off the beard.
Scoop out the flesh from one shell.
Repeat the same with all the mussels.

Beat egg yolks with chopped chilli, curryleaves, garlic & shallots.
Keep in the refrigerator for 30mn.
Cover the mussel with a spoon of the prepared mixture & then top with bread crumbs.
Arrange the prepared half mussel shells on a baking tray.
pre haeat oven to 180°C & bake for just 8 mn - until brown.
 Serve immedietely as a starter.
