Meloui - Morroccan Flat Bread
Ingredients
300 g flour
200g semolina
200 ml water
1 tsp salt
Oil /ghee
Method
Mix first four ingredients & knead well.
Cover the bowl with a damp cloth & keep aside for 1 hour.
Spray some more flour & knead it again .
Make evenly sized balls.
Take a lemon sized ball & flatten it as thin as possible.
Spread some oil & fold from either sides.
Then roll & keep aside.
Repeat the same with other dough balls.
Then press & flatten using a roller.
Heat a non stick pan & just smear some oil.
Cook the roll out meloui.
When it turns brown, brush ghee, flip & cook the other side.
Repeat the same with the rest.
Serve this flaky, crispy meloui with veg / non veg curries.
