Cucumber Curry with Jackfruit seeds - Kerala Special
Vellerikka- Chakka Kuru Benni
Ingredients
1/2 tsp cumin seeds
1/2 tsp red chilli powder
1/4 tsp turmeric powder
1 cup freshly grated coconut

10 Jack fruit seeds
1small Indian cucumber (Vellerikka)
A tomato(chopped)
1/4 tsp turmeric powder
1 tsp salt
1 green chilli (half slit)
1/2 tsp cumin powder
For seasoning
1 tbsp grated coconut
1 tsp musturd seeds
1 dried red chilli
Curry leaves
Method
Grind the first four ingredients into smooth paste & keep aside.
Remove the outer white skin of the jackfruit seeds & soak them for an hour in water.
Using a knife scrape the brown inner skin & cut in sticks.
Peel cucumber, scoop out seeds & cut into small pieces.
Cook jackfruit seeds in a bowl of water with chilli, salt, turmeric & tomatoes.
When half cooked add chopped cucumber.
When cooked, add the ground coconut paste.
Stir well. Remove from fire & let it cool.

Heat oil in a pan.
Splutter musturd seeds,curry leaves & 1 tbsp grated coconut.
When it turns golden brown add to curry.
Garnish with fresh curry leaves & cumin powder.
Serve with rice.
