Courgette Prawn Curry
Ingredients
1/2 tsp cumin seeds
1/2 tsp red chilli powder
1/4 tsp turmeric powder
1 cup freshly grated coconut

300g tiger prawns ( fresh/frozen)
1/4 tsp turmeric powder
1/2 tsp salt
1/2 tsp red chilli powder

2 courgettes (Zucchini / Italian squash)
A tomatoe (chopped)
1/4 tsp turmeric powder
1 tsp salt
1 green chilli (half slit)
1/2 tsp cumin powder
For seasoning
1 tbsp grated coconut
1 tsp musturd seeds
1 dried red chilli
Curry leaves
Method
Grind the first four ingredients into smooth paste & keep aside.
Shell, devein and wash prawns using salt and turmeric.
Marinate in salt & red chilli powder keep in the refrigerator for an hour.
Peel courgettes & cut into small pieces.
Cook courgette in a bowl of water with chilli, salt, turmeric & tomatoes.
When courgettes are half cooked, add marinated prawns.
Add the ground coconut paste.
Stir well & cook for a while.
Remove from fire & let it cool.

Heat oil in a pan.
Splutter musturd seeds,curry leaves & 1 tbsp grated coconut.
When it turns golden brown add to curry.
Garnish with fresh curry leaves & cumin powder.
Serve with rice.
