M'khamer - Moroccan Stuffed Bread
M'khamer
Ingredients
200 g flour
200g semolina
1 tsp salt
1 tbsp olive oil
200 ml luke warm water
15g fresh yeast (1 tsp dried yeast)
1 tsp sugar
Oil for brushing
*Filling*
400g minced meat
A courgette(chopped)
A carrot(chopped)
An onion (chopped)
A green chilli (chopped)
A tomato (chopped)
1 tbsp ginger+garlic paste
1tbsp coriander powder
1/2 tsp chilli powder
1/4 tsp turmeric powder
2 tbsp olive oil
Coriander leaves
Salt to taste
Garam masala (optional)
Method
Fry onions till light golden brown.
Add chopped vegetables along with salt.
Then add ginger- garlic paste & chilli powder.
Then minced meat along with chopped tomato.
Add some water & cook for 10 min.
Garnish with coriander leaves & garam masala.
Keep aside to cool.

Dilute yeast in luke warm water with 1 tsp sugar.
Set aside for 15 minuites.
Mix first four ingredients & knead well.
Cover the bowl with a damp cloth & keep aside for 1 hour.
Spray some more flour & knead it again.
Make evenly sized balls.
Take a lemon sized ball & flatten it with a greased palm.
Spread the filling in the middle & fold as in the photos.
Repeat the same with other dough balls.
Keep the stuffed balls aside for another 30mn.
Flatten it with a greased palm.
Heat a non stick pan & cook it.
Smear some oil & cook the other side.
Serve hot.
