Lemon & Poppy Seed Cake

200g flour
100g butter
120g sugar
A pinch of salt 
4 eggs 
Zest & juice of one lemon
1 tbsp black poppy seeds

1 tsp baking powder 
400g icing sugar
Juice of one lemon + yellow colour

Remove the zest of  a lemon using a grater.
Avoid the white pith of the lemon which gives a bitter taste to the cake.
Preheat oven to 180°C.

In a bowl
beat eggs.
Cream together the butter, sugar & salt .
Add beaten egg & mix well.
Sieve the flour and baking powder together and fold into the cake mixture.
Add lemon juice& the zest & mix well.

Mix well & pour the batter into the greased cake pan.
Bake for 30- 35mn until risen & golden-brown.
Mix icing sugar with lemon juice & make thick icing.
Add yellow colour, mix & drizzle over the cake.
Leave aside for 3 hours.
Cut & serve for tea.
