Pasteis de Bacalhau - Portuguese Cod Fritters
Pasteis de Bacalhau
Ingredients
A piece of ginger(chopped)
6 shallots(chopped)
2 garlic cloves
Curry leaves (chopped)
A green chilli(chopped)

3 salted cod filets
3 big potatoes (cook,peel & mash)
2 eggs (beaten)
Chopped coriander leaves
Freshly ground pepper
Salt to taste
Oil for frying
Method
Boil the quartered potatoes in water until tender (20 mn).
Drain & let it cool.
Peel, mash it & keep aside.
Soak the cod filets in water for 12 hours , changing water 4 times.
Drain & cook in water until tender (15 mn)
Drain the filets & mince it.
Using a chopper blend all the four ingredients along with minced cod.
Add the blended mixture with the mashed potatoes & eggs.
Garnish with freshly ground pepper &chopped coriander leaves
Mix well & shape them with two tablespoons.
Deep fry the croquettes in a pan or a deep fryer.
Remove using a slotted spoon & drain on a kitchen paper.
Serve these crunchy croquettes for tea or as a starter.
Portuguese serve "Pasteis de Bacalhau" with white rice.
They use parsley to flavour & olive oil for frying.
