Bacalhau com natas
Ingredients
A bay leaf
A piece of ginger(chopped)
2 onions (sliced)
2 garlic cloves
Curry leaves (chopped)
2 green chilli (chopped)
200g thick cream
1 tsp cumin seeds
3 salted cod filets
3 big potatoes (peel & cut in fingers/cubes)
Coriander leaves / Curry leaves (chopped)
Freshly ground pepper
1/4 tsp nutmeg powder
Salt to taste
Oil for frying

70 grated cheese (Emmentel)
2 tbsp bread crumbs
Method
Soak the cod filets in water for 12 hours, changing water 4 times.
Drain & cook in water until tender (15 mn)
Drain the filets & mince it.
Peel,wash & cut potatoes into thin fingers.
Heat oil in a pan & fry sliced onions along with a bay leaf.
Add chilli & ginger +garlic paste;
Fry for a while & then add potato fingers .
Add water, cover & cook for 5 mn.
Remove from fire & then add minced cod with cumin seeds.
Add cream & chopped curry /coriander leaves .
Garnish with freshly ground pepper & nutmeg powder.

Preheat oven to 180°C.
Grease the Spanish terracotta tapas dish with butter
Evenly spread the prepared potato - cod mix.
Bake for 15mn.
Remove from the oven.
Sprinkle cheese & crumb mix on the top.
Return to the oven for 5 min until browned.
