Carrot Thari Unda 

1 cup semolina (dry roast)
1 cup sugar
1 cup grated carrot
3 tbsp freshly grated coconut / dessicated coconut
100 g butter / 4 tbsp ghee
1/2 tsp cardomom powder
Raisins & Cashews
Dry roast semolina in a pan for 5 mn & keep aside.
Wash, peel & cut the carrots in chunks.
Just blend in a food processor & keep aside.
Heat ghee in a non stick pan.
Fry raisins & cashews & keep aside.
 In the same pan add rest of the butter  & fry scraped carrots.
Fry for a while & then add coconut & sugar.
Cook the carrot & coconut in syrup.
When it leaves the sides of the pan, remove from fire.
Add roasted semolina litle by little & mix with the wooden spatule .
Then add
fried raisins,cashews & cardomom powder.
Mix, cool & make small balls.
