Soft Egg Yolk Buns

375g flour
3 egg yolks
20g fresh yeast
60g melted butter
160ml milk
4 tbsp sugar
A pinch of salt
For glaze
1 egg yolk
1 tbsp milk
Preheat oven to 180°.
Dilute yeast in luke warm milk with 1tbsp sugar.
Mix all the other ingredients & knead for 10mn
Cover & keep the dough aside for an 2 hours. 
Make orange sized balls .
Arrange the dough balls on a greased baking tray with enough space between them.
Allow them to rise for half an hour.
Beat an egg yolk in a tbsp milk;
Glaze the buns & decorate them with coarse sugar crysals.
Bake for 20-25mn.
